These Chicken Meatballs are full of flavor and so incredibly moist – earning the title Perfect Chicken Meatballs!
The obvious best part about this recipe is the taste… and the simplicity in making it. Check it out: put the spices in the ground chicken, roll them into balls, and bake for about 30 minutes. Yes, that fast.
I was getting bored of making the same chicken meals so I bought a pack of boneless skinless thighs and turned them into ground chicken. Now, my plan was to use them for tacos – BUT, we’d decided to take the kids on a last minute vacation before school started, so I wanted a better way to take chicken without having to worry about it getting hard or not tasting the best when cold.
AHA moment -> make chicken meatballs!
Granted this isn’t a unique idea, but to my credit, I hadn’t made chicken meatballs before – it’s always been with lamb.
I’m being completely honest when I say that these chicken meatballs are friggin’ delicious. They’re phenomenal right out of the oven hot and super juicy, but they’re also fantastic the next day and the day after that – even cold. They kept their texture and flavor. And the kids went crazy for them, so you know it’s a keeper. And because it’s a keeper, I’m sharing it with you.

Back to this recipe which you’re going to totally fall in love with. On top of everything I’ve already mentioned, these meatballs are free from:
- dairy
- egg
- peanut
- tree nuts
- fish/shellfish
- soy
- mustard
- sesame
And if your kids are picky eaters, definitely give this a try. They’ll love how tender and tasty the chicken is, without the ‘icky’ soft tissue and cartilage stuff that my kids can’t stand to look at.

- 4 lbs ground chicken
- 1 onion, minced
- 3 tbsp flour
- 2 tsp sea salt
- 2 tsp garlic powder
- 1½ tsp mild curry powder
- 1 tbsp parsley flakes
- 1 tbsp seed or veggie oil
- Preheat oven to 420F
- In a large bowl, add all dry ingredients and stir quickly to combine.
- Add ground meat, minced onion, and oil, and mix thoroughly until spices are completely mixed in the chicken.
- Roll chicken into round balls {about a small palm full}, and line up in rows in a deep oven-safe pan/dish.
- Bake in the preheated oven for 30-35 minutes, until color is light golden brown and juices are clear.
- Remove from oven, allow meatballs to sit for 2-3 minutes before enjoying.
