Fridays are usually dedicated taco night – always a crowd favourite. Because of Munsur’s beef allergy, our substitute is lamb. It tastes great and no one’s been able to tell the difference when I make it! My tacos are prepared slightly differently in that I don’t add pre-mixed seasonings and the traditional taco spice packages. Since dairy and its many names is in most processed foods, seasonings and mixed spices, among other things, are completely avoided.
This is such an easy meal to make and takes only minutes! Give it a go today :)
2tbsp olive oil
1 large onion, finely chopped
2lbs ground lamb
1/4tsp cayenne pepper
salt and pepper to taste
Taco shells (we use President’s Choice Taco Shells available at Loblaws, Superstore, and No Frills)
1. First, chop up the onion and get it going in the pan with the oil over medium heat. Stir from time to time to ensure even wilting- adding salt at this stage will help the onion’s wilting time. While you have the onions cooking, prepare the taco shells according to package instructions.
2. Next, add the ground lamb and stir until it’s incorporated with the onion. Leave them to cook for about 5 minutes or until all of the lamb has cooked through and is a nice brown colour.
3. Add your spices and stir, adjusting the salt accordingly. Voilà! Your meat is ready to go!
4. All that’s left is to prepare the toppings of your choice. Toppings we like to put in our tacos are avocados, peeled diced tomatoes, Daiya’s cheese shreds, and salsa.
And there you have it. A healthy meal which includes your protein, carbs, and your veggies. I love Taco Fridays :)
