Who’s ready for this deliciously perfect carrot cake??
*virtual high-fives*
I know I am – so let’s get to it!
New year = new recipes…like this delicious cake!
This carrot cake is simply amazing. It’s made in one bowl – a dump, stir, and pour kind of recipe; bursting with flavor and texture and all things delicious.

Who is this cake for?
This cake is for you if you’re any of the following: an avid baker, you’re not a kitchen-y person, not a fan of getting umpteen dishes dirty to make one thing, you love carrots, not a huge fan of carrots, love eating, love socializing, love your quiet ‘me-time’, love having a little something sweet with your tea (hi sis!), need a last minute “something” to bring to your family’s/friend’s gathering, etc etc etc…. this cake is for YOU!!
And it’s so easy to make, it can almost make itself. Ok, not there yet. But we never thought self-driving cars were possible, and look how far we’ve come!

Brief history of this cake.. my cake!
This deliciously perfect carrot cake came to fruition thanks to my kids and my juicer!
I bought the juicer of my dreams (btw, it’s pink!) back in the summer… and I used it for the first time 5 months later during the winter break. Thanks to the kids reminding me daily that I spent so much money on it and I haven’t used it once since I bought it – no doubt influenced by my husband complaining about our, as he put it, fancy pink counter ornament.
So under threat of my husband replacing it with a coffee machine, I grabbed the bag of carrots, washed, peeled, cut to appropriate size, and started juicing. It was actually fun!! Didn’t produce much juice (don’t tell my husband) but the whole process and trying it out with my kids was the best part. What resulted from the juice was a lot of pulp! And of course I wasn’t going to let that go to waste.
Soooooo the need to make carrot cake was born!

The following is a list of all the reasons you need to make this cake… and stat! This includes but isn’t limited to:
it’s made in one bowl
all the ingredients are likely already in your pantry and fridge
it tastes incredible
it’s incredibly easy to make
kids can make it!
fun to decorate
perfect to take with you to a dinner or when someone is coming to visit!
you can serve as is or slabbed with your fave frosting (I used my lemony frosting)
I have yet to meet someone who doesn’t like carrots (please don’t let it be you!!)
I left the best reason for last – for those of you with food allergies, this literally takes the cake! It’s made allergy friendly as always – free from:
dairy
egg
nuts
soy
junk!
You can’t beat that!

Carrots are the new orange (or black). What?
You are going to L.O.V.E. this cake, promise! Just try it, you have nothing to lose (except for that bag of carrots that’s been sitting in your fridge for like a week begging to be used somehow!!!). Make it and let me know what you think below in the comments and on my social pages here, here, and here. Commenting keeps me on good terms with the Mr. (Google, that is), so comment away!
2020, you’re on!
This year I’m dedicating it to me. It’s my year for growth, learning, failing (hopefully not too much), trying, taking chances, and being more present with my kids and husband and family.
Wishing you all an incredible year ahead! Here’s to health, happiness, and endless possibilities! xx
