Cranberry Apple Cinnamon Rolls

The perfect dessert to indulge in, made with delicious tart cranberries and sweet apples. Easy to make - your family and friends will thank you for it!
I can’t believe I’m about to say this and slightly nervous at the same time because I don’t want it to happen but… it’s still nice out! Not a drop of snow or cold winds or anything nasty. Yesterday was 17 degrees celsius! For anyone in my city or in the vicinity, please don’t blame me if we get a snow storm tomorrow – just saying….
Have I got the perfect fall dessert for you this week! My Cranberry Apple Cinnamon Rolls is the best thing to indulge in, with coffee, tea, milk, or as is. The dough is so pillowy soft, it melts in your mouth. Cranberries and apples are in season and they pair so beautifully together, so it was only natural to use them in this recipe. Your family, friends, and taste buds will thank you {with the exception of your unwanted belly fat – I take no responsibility for that}.

I had an obsession with Cinnabon’s cinnamon rolls and their icing back in the day. But since my kids have never eaten there, I make cinnamon rolls for them at home. And the combo of the tart cranberries with the sweet apples make these Cranberry Apple Cinnamon Rolls perfect for this time of year, and also for Thanksgiving, Christmas, Eid, New Year festivities, parties, get-togethers… you get the drift.

Seriously can’t wait for all of you to make these easy and delicious Cranberry Apple Cinnamon Rolls.

Instructions
- 1In a large bowl, mix together all dry ingredients - flour, yeast, salt, sugar, baking powder, and cornstarch.
- 2Next, add warmed milk and combine with dry ingredients to make the dough. Then, add oil and incorporate into dough.
- 3Cover bowl with plastic wrap and a kitchen towel and place somewhere warm to allow dough to proof (rise). Approximately 1 hour.
- 4In the meantime, prepare the filling: in a small bowl, combine cinnamon with brown sugar. Set aside.
- 5Next, heat saucepan or skillet on medium high heat, and add oil. Add diced apples and cranberries. Stir a few times then add maple syrup.
- 6Cook fruits for 5 or so minutes, until apples are cooked through and cranberries have popped. Set aside and allow it to cool.
- 7To assemble: Remove dough from bowl and place on a lightly floured work surface. Roll dough to 1/4" thickness - then spread 2-3 tsp of vegan butter or softened coconut oil on top of dough.
- 8Top dough with cinnamon-sugar mix, spreading evenly - all the way including the edges.
- 9Finally, add cooled fruit mixture and spread evenly on top of the cinnamon sugar.
- 10Next, Starting with an edge, tightly and carefully roll the dough, and cut 1-1.5" rolls.
- 11Place rolls in a well 'buttered'/greased pan and allow them to rest for 10-15 minutes - Preheat your oven now to 400F.
- 12Place in the preheated oven and bake for approximately 17 minutes, until rolls are a pretty light golden color. You may place them under the broiler on low for 1-2 minutes to give color to the top (DO NOT LEAVE YOUR OVEN UNATTENDED!)
- 13Make Vanilla Glaze now: place all ingredients into a bowl and whisk very well until fully combined.
- 14Remove and drizzle vanilla glaze. Serve warm!
- 15Rolls keep in a lidded container for a few days. Enjoy!
