A delicious and healthy dish made from cauliflower! Tender, moist, wholesome, sugar-free, easy to make, baked, and is perfect on its own or served as a side to your main meal. Best of all, it's kid-approved!
Wait until you try just a bite of these uh-mazing Cauliflower Tots! They instantly reminded me of a favourite meal my mother used to make for us when we lived at home. Except that it was made with eggs as a binder…I’ll be making my own allergen-friendly version of that dish super soon! But this is a close second. It’s delicious you guys!
Its slightly crispy outside is perfection, then you get into the soft middle. Oh my God. The best thing. My favorite part was the kids had no clue it was made with cauliflower. Not that it really matters to me since both Munsur and Sofia love their fruits and vegetables. #thankful

I guess this is the part where I have to explain my absence from my beloved blog. Well, I’ve been sick off and on for the past few weeks. It started with the dreaded stomach flu which lasted for about a week. A few days afterwards, I found out one of my dearest relatives was going through a rough time and needed family support more than ever.
A few days after that, Munsur came down with something. Then I followed suite. Except that my cold didn’t consist of sneezing, congestion, or a sore throat, but massive pounding ear pain (luckily it didn’t turn into an ear infection), followed by both ears taking turns at getting plugged. But that didn’t bother me because I was just glad it didn’t turn into an infection! If you’ve ever experienced ear infections before, you know what I’m talking about – those things are the worst!
In between my ear pain and temporary hearing loss, I was busy planning my husband’s 40th with the kids. We made him a book titled “40 Things We Love About You” and the kids thought of 40 unique things they loved about their father. I took an old book and recycled it by gluing white paper on every page (I ripped out anything after 40 pages) and Munsur wrote all of the sentences on each page. Sofia, Munsur, and I, doodled on the pages to fill in the empty spaces. This was his present. He loved it very much.

{Excuse the poor image quality.}
Afterwards, I had our close friends come over for light dinner and desserts – which I’ll be sharing with you very soon. It was a relaxing weekend (relatively speaking) and all went well.
Of course, there was photo work too that I had to prep for and submit.
Oh and Sofia is now sick!
So, that sums up what’s been happening since I last spoke to you on here. :D
Now. Let’s get back to these tots – shall we? They’re healthy, incredibly simple to make, tasty, oven baked, wholesome, free from most common allergens, sugar-free, and best of all, kid-approved. In under 30 minutes, you have a yummy savory treat waiting for you to indulge in. Yes please!
Give this recipe a try and let me know what you think.
