The taste of this chicken is Heaven on Earth. I love when I make something that turns out amazing the first time around; and this deliciousness is one of those first-attempt-success meals. The sweetness from the dried apricots plays well with the saltiness of the chives and onion cream cheese, and the spinach adds another layer of flavour. Together, these three ingredients work harmoniously and provide the perfect combination to satisfy both your sweet tooth and your salty cravings.
You will love everything about this dish. From how simple it is to make, to how good it tastes going down. And the best part is there’s no guilt about eating it. Can’t ask for anything better. This healthy, delicious, and can’t-get-any-simpler-to-make stuffed chicken, is guaranteed to make your taste buds dance with glee. Some of you might think you’re even cheating on your new year’s resolution diets but I assure you, your waistline will be safe while enjoying this chicken!
On a side note, I have another recipe for meringue cookies that are baking in my oven as we speak. And I cannot wait until I share the recipe with you! It’s soooo good. Anyway, just wanted to share that. :)

A few of you have asked whatever happened to my Sundays TV banning. To update: it was an utter failure. Yup. Well, I shouldn’t say that, it lasted a good Sunday and a half before I found the TV back on when I got back from a quick grocery shopping trip. I tried. We don’t watch much television, but it seems to be on “Treehouse” {kids channel/program here in Canada} most of the day for background noise. You know, because it’s not noisy enough with two little niños running around and talking to each other like people have their fingers jammed in their ears and can’t hear a thing. And here’s a little confession I’m a tad guilty admitting; I kinda use TV for my own selfish reasons. When I know Sofia’s favourite show is coming up for example, I’ll turn it on for her to watch and I escape to do my chores…is that terrible? Treehouse has been a great babysitter and I figured their shows are somewhat educational. Can I get some moral support? Please share how you take time away from the kids to do what needs to get done in the house; I’d love to read all about them!

OK. Go to the store and get a pack of boneless skinless chicken thighs and the other three ingredients and make this for dinner stat. It’s healthy, guilt-free, tasty, sweet, savoury, dairy-free, paleo, allergen free, etc etc. And did I mention it’s so ridiculously easy to make? As always, don’t forget to tag No Dairy No Cry on your social media pages by using #nodairynocry and @nodairynocry when making any of my recipes. I love seeing all of your creations! Happy cooking, friends. :*
