I teased you on Instagram last night but the wait is over, my friends! I really wanted to add that in the title but didn’t want it to be longer than it already is. :)

My ‘foods to-make’ list is ever growing – it’s longer than the most eager kid’s Christmas wish list. Back in the day I used to make a 3 page list of every single toy I wanted Santa to bring me (thanks TV commercials!) complete with pictures cut out from the yearly Toys R Us holiday catalogue… It was a lot of fun being a kid!

Well now my grown-up list consists of foods I need to make for my family. And these candy apples have been at the top of that list for a few years. I don’t frequent the mall much {convenience of online shopping}, but when I do go, I sometimes pass by that Rocky Mountain Chocolate store and stare at all the beautiful candy apples they have on display. I look but don’t touch ;)

It was only a matter of time before I made my own version of these treats for Munsur and Sofia. I thought about making the traditional red candy coating but kept picturing their poor little jaws hurting after biting into one of those hard shells.

*confession* I’ve never had a candy apple! So I only have my assumptions to lead me to think that biting into a hard-shelled apple would hurt their jaws and tiny growing teeth.

Funny little story: I had a Calculus teacher in high school who used to always remind us not to assume “because it makes an ass out of u and me!” That line was pretty much the only thing I took away from that class. Sorry Mrs. Wilton!!

Where was I… oh yes. These gorgeous apples!

Of course there’s the beautiful fall season we’re fortunate to experience in Canada. The leaves have started to fill the sidewalks and streets with their pretty colors and the scenery is magical with everything changing and the breathtaking views of nature surrounding us.

So fall = comfort foods like chocolate and… butterscotch! These Chocolate Butterscotch Dipped Apples smothered in crushed cookies are the perfect thing to make for the season. They take no time and the kids, your friends, family, neighbors, everyone will enjoy receiving an apple dipped in such heavenly flavors.

I used thick twigs from my backyard to make the experience a bit more unique – speaking of which, apparently some branches are kinda not good for us to consume or something like that, so be mindful if you want to do the same thing to make sure you don’t get like a poisonous branch for this treat, unless you want a true Snow White experience :D

I figured that the branches are going right into the core, ie the part we don’t eat anyway, so to me it was all good. But to be safe, I shaved one end of my sticks and baked them in the oven at 350F for 10 minutes to kill anything that may have been on them.

Feel free to use whatever can hold your apples, like popsicle sticks, thick bamboo sticks, or those long lollipop sticks you find at bulk stores or craft stores like Michaels.

To be honest, my kids found it kinda hard to bite into the entire apple while holding it, Sofia more than Munsur, so I ended up cutting their apples into 4 large slices and they loved it just as much if not more because their sliced apples were coated in butterscotchy-chocolately-crushed-cookie goodness.

However you choose to serve yours, I hope you love this easy to make recipe – which is free from:

  • dairy

  • egg

  • soy

  • peanuts

  • tree nuts

  • wheat/gluten

  • fish/shellfish

  • sesame

  • mustard

  • all animal products and by-products

These beautiful and mouth-watering dark Chocolate Butterscotch Dipped Apples covered in crushed cookies are full of flavor and fun. You’ll have them ready to go in about 10 minutes. Trust me and make them today!

Instructions

  1. 1Insert sticks into the core of each apple, then place on a waxed/silpat lined baking sheet. Set aside.
  2. 2In a heavy 3-4 litre/quart pot, add milk, brown sugar, salt, and vanilla. Heat on medium low for ~ 5 minutes, without stirring.
  3. 3Once it starts to bubble up, reduce heat slightly if necessary (if you see the mixture rising), and continue cooking the butterscotch for an additional 5 - 7 minutes. {see notes}
  4. 4Turn heat off and add coconut oil, whisking continuously and with vigor until oil is completely emulsified with butterscotch.
  5. 5Pour butterscotch into a glass proof cup (measuring cup etc) to dip your apples. {Optional step but it makes for easy dipping!}
  6. 6Place dipped apples back on lined baking sheet.
  7. 7While apples are setting, melt the chocolate chips in a double boiler until all chocolate is smooth and silky. Pour into a glass proof cup for ease of dipping.
  8. 8Take butterscotch apples and dip into melted chocolate.
  9. 9Cover in crushed cookies, and place back onto lined baking sheet to set.

Notes

If you decide to use twigs/small branches like I did, then be sure they're clean and safe to use, and also sharpen one end to make it easier to insert into the core. Cooking time for the butterscotch: If you leave it to the 7 minute mark, the consistency will be thicker when you dip. It doesn't alter the taste in any way. So you can't mess this recipe up :) I cooked mine to 7 minutes but I will stop at 5 minutes next time because I'd like my butterscotch a bit runnier. I'll try it at 5 minutes and change/add to the notes if results are better. If you don't have refined coconut oil, use regular coconut oil, it'll just be more fragrant. And if coconut is an allergy/concern for you, then use a dairy free butter instead. Although I haven't personally tried it, it should work just as well in this recipe. If you try it with a substitute please let me know how it turned out! You can place your chocolate butterscotch dipped apples in the fridge for a faster set time. Although I found that it wasn't necessary. Also, you can just enjoy them right away too! Well, wait a few minutes so you don't burn your mouth and tongue from the hot chocolate ;)
