A delicious shrimp zucchini salad perfect for lunch or dinner, made with healthy good-for-you-ingredients.

Attempting to eat lighter dinners isn’t always easy, but it’s something I’ve been doing because I’ve noticed – sadly, that my metabolism isn’t what it used to be {insert crying face emoji}. So, out with the heavy meals, and in with awesome healthy {yet always} delicious foods!

This recipe comes to you all the way from Dubai, courtesy of fellow foodies Maria and Nadine at Keep Eat Real. They’re licensed dietitians and nutrition consultants who aim at making your life a healthier one by helping with inspirational meals and desserts on their Instagram page.

I wasn’t sure what to expect when I was putting this Coriander Shrimp Zoodle Salad together, but it exceeded any expectations I had and I know you’ll feel the same. A few things to note: I personally adjusted the recipe by adding an extra zucchini so as to balance the salad to shrimp ratio, but you may find that 1 zucchini is plenty. I used medium heat setting with the ingredients that were required to be cooked, and also cooked my shrimp right from frozen.

Enjoy a healthy lunch or dinner for 1 or 2…that is, if you’re feeling generous ;)

Thank you Maria and Nadine for an amazing recipe!
