Healthy Zaatar Scones

Such an easy delicious recipe to make; these Zaatar Scones are perfect for breakfast or to pack for lunches! You're going to love the flavor, the process, and the results! Made in one bowl and ready to be devoured in less than 30 minutes!

Who’s ready for another tasty recipe using JUST Egg? We’re talking Manaeesh in scone form…oh yeah!! I give you Zaatar scones, my friends.

Did you fall off your chair yet? :D

Let’s do this!!

What is Zaatar?

Zaatar is a delicious mix of herbs that includes, oregano, thyme, sumac, sesame seeds, and salt. It’s widely used across the Middle East. It can be used as a rub, in salads, dips, and of course, to make manaeesh; and it’s readily available in all middle eastern stores.

Just a word of caution, make sure like with anything you buy, to read the ingredients. Some kinds can have pistachio added to enhance color. So please always read your labels, or better yet, if you know someone who can bring you fresh zaatar from Syria, Palestine, Jordan, or Lebanon, then do that!

When I used to visit Damascus with mom, she’d take me to ‘Suk Ilhamadieh’ – the oldest and one of the most famous and beautiful outdoor markets in the world. You can find everything there, including gorgeous freshly ground spices like zaatar ready for you to use in your kitchens.

The memories :)

A classic made fancy

Every Sunday without fail, we have mana’eesh (aka zaatar pies) for breakfast. They’re absolutely delicious and a staple in our culture and my home. So you can imagine how excited my family was to try these zaatar scones.

Scones are traditionally made with very cold butter, cream or full fat milk, eggs, and usually fruit. But we’re doing none of that here! I used olive oil, coconut yogurt, JUST Egg, and zaatar! Healthy, delicious, amazing!!

Ohhh man are you gonna love this!

Good News

I’m excited to share that JUST will be coming to Canada this fall!! How great for those of you who have been waiting patiently for it to arrive.

This brand is really cool. The things you can make with their products are great, and the fact that it acts like regular eggs (can be scrambled, baked with etc), is great news for anyone who has an allergy to egg or prefers not to consume it for whatever reason.

When I was asked to try their product, I made the most delicious crème brûlée that took everyone (including the JUST peeps) by surprise! If you haven’t tried it yet, please do! It’s super creamy and smooth. YUM.

They loved it so much that they’ve asked me to make a savoury dish this time around. So naturally I wanted to make something extra incredible… and that’s how the zaatar scone was born ;)

Free from these nasties

These savoury healthy zaatar scones are made free from:

  • dairy

  • egg

  • peanut

  • tree nuts

  • fish/shellfish

  • sugars

I really can’t wait for you to try this recipe – I know you’re going to love love love it.

2 ways to make – Your choice

When I was testing this recipe, I made 3 batches and liked them all. So how you choose to make it is totally up to you. For a true scone, follow the instructions in the recipe card below. If however you want to make it even simpler and more fluffy, then do the following:

In your bowl, whisk all the dry ingredients well. Then add all the wet ingredients. Using a spoon or spatula, combine well until dough comes together and there are no dry flour bits remaining. Follow the rest of the recipe card from that point (shape, cut, chill, bake!).

We personally loved the first batch (the fluffier one). But again, I’ll leave it up to you to decide. True scone texture, or fluffy scone? Or better yet, make it twice using both methods!

tia!

When you make these scones, don’t forget to rate it and leave a comment to let me and the rest of us know how you enjoyed it!

Ingredients

Instructions

  1. 1In a medium to large bowl, add flour, baking powder, baking soda, salt, zaatar, sumac, and garlic powder. Whisk well until combined.
  2. 2Make a little well in the middle and add the olive oil. Using a pastry cutter or a couple of forks, work the oil with the flour mix until you get wet sand texture. Optional step: place in the fridge for a few minutes to chill.
  3. 3In another bowl, combine your wet ingredients well: yogurt, JUST Egg, and honey. Add to the flour mix and using a spoon or spatula, stir everything until combined and no dry flour remains. Be sure to hold onto the bowl that contained the wet ingredients for later use!
  4. 4Dump the dough onto a flour work surface, and using your hands, gently fold the dough 3-4 times before shaping it in a flat disc that measures 8" across and approximately 1 1/2" in height.
  5. 5Cut into even wedges and place on a lined baking sheet. Place the baking sheet in the fridge to chill. Now, preheat the oven to 375F.
  6. 6When oven is ready, remove chilled wedges from the fridge, and using a pastry brush, dip into the bowl that contained the wet ingredients (you'll have leftovers in it!) and brush the tops of the wedges. Then sprinkle sesame seeds and sumac as well if you'd like.
  7. 7Place baking tray in the oven and bake for 20-25 minutes, depending on the size of your wedges, until wedges are a nice light golden brown in color.
  8. 8Remove from oven and allow to slightly cool... or enjoy immediately if you can't wait like me!

Notes

Scones make for the best quick breakfast and at work or school lunch. Easily packable and these scones are absolutely delicious paired with freshly cut cucumbers and some olives if you want to get fancy ;) Tip: measure out the olive oil and chill it in the fridge to help it solidify a bit before adding to your flour mix. It's not a necessary step but it'll help when cutting into the flour. Zaatar is a middle eastern spice that consists of oregano, thyme, sumac, sesame, and salt. It's readily available at any middle easter stores and you may even be able to find it in some grocery stores as well. If zaatar is hard to come by, sub 1/3 cup dried oregano and increase the salt to 1/2 teaspoon. If you don't want to use honey, sub equal amounts of sugar.
