Healthy Summer Pasta Salad
If you frequent this site, then you know how much I love my salads! I try to have salad made every day to serve with whatever dish I’m making that day. And most days, I opt to eat the salad as the main meal. It’s such a versatile dish – you can top it with a protein like chicken or fish for that added nutrition. Or you can enjoy as is, because frankly, it’s so good!!
This summer pasta salad is packed with flavour! The combination of fresh vegetables, pasta, and a light dressing makes it the perfect dish for any occasion.

Notes
This pasta salad tastes even better the next day because the dressing gets absorbed by the pasta and vegetables in the fridge! You can make the vinaigrette ahead of time and keep it in the fridge ready to go! I get my fire roasted peppers from Costco. They're sold in a jar and are delicious in so many dishes including this salad! I'm sure you can find them at many grocery stores but that's where I get mine. Feel free to use any pasta that you have. I've used fusilli, bow tie, and penne. Also, if you're avoiding gluten, simply swap with your preferred brand. I've had quinoa pasta in the past and really enjoyed it. The brand I bought is GO GO Quinoa. If you have fresh corn then use that! I use frozen corn that I bring to a boil for a few minutes then add to my salad. I don't wait for it to cool too much personally. But I don't mind my salad warm. Calories: 2469 kcal
