If you ever doubted my love for salads – here’s yet another one that you’ll be adding to your repertoire – This Sweet Potato Kale Salad with Roasted Chickpeas.
You ready? Because I definitely am!!
No.1 Salad fan
You can only call yourself a fan of something if you’re completely and utterly obsessed with it. And I happen to be a self-proclaimed salad lover.
Observe exhibit S (for salad): these amazing salads are right up there with this one! Harvest Kale, 5-Minute Lentil Chickpea, Berry Fig. That last one is a showstopper.

A very brief history
I even make salads by accident! This Sweet Potato Kale Salad With Roasted Chickpeas was actually a result of putting too much of everything on my plate. I had made roasted sweet potatoes one night, and I also made a simple – yet delicious – kale salad.
*Light bulb*
I combined the two together, and what came next was the most delicious food I’ve ever accidentally made!
But it was still missing something. Something crispy perhaps?
*Another light bulb* … I was on a role that night.
The thought of adding crunchy, airy, perfectly spiced roasted chickpeas came to fruition when I preheated the oven and roasted some perfectly spiced chickpeas ;)
P.s. This is writing at my finest :D

Why you’re going to love this recipe
This salad is delicious, healthy, vibrant, full of good-for-you ingredients, has many layers of texture and flavor, and it’s also free from the following:
dairy
egg
nuts
soy
gluten
mustard
sesame
sugar
junk!!
You have the soft leafy kale mixed with tang and healthy fats; and perfectly cooked sweet potatoes (who doesn’t love this vegetable?! … praying it isn’t you because you’d totally be missing out!!), crunchy delicious chickpeas, and the slightest kick from the onion.
This is perfection in salad form.
It’s all about perspective…
This may seem like a labour intensive operation, if you choose to see it that way. The way I see it: it’s the perfect salad to make when you’ve roasted some sweet potatoes or have some left over from the day before!
And as for the chickpeas? Simple. Just roast them and try to see if you can keep your hands off of them! They are that good!! So good in fact, that I roast twice the amount and I store them in a mason jar for whenever I feel like snacking on something uber yummy… and of course, when I’m in the mood for this awesome salad!!!
See? It’s all in how you see things. Are you a glass-full kind of person? I sure hope so :)

Healthy = happy. *I see you rolling your eyes!*
Healthy food can and is absolutely the most delicious of food options out there. And if it’s made at home – major bonus. Even seemingly healthy foods sold in restaurants aren’t really that healthy. Think of the sauces and dips and how they were actually prepared and cooked.
When you make your food at home – even if you start with one meal a week, not only are you aware of what you’re putting in your food, but you’re 100 percent in control of every step of the process. And that my friend, is what I call self care and caring for your loved ones too. It’s all about what you eat and what you choose to avoid.

Back to business… food business, that is!
I know you’re going to love this Sweet Potato Kale Salad with Roasted Chickpeas – it has a bit of everything to please your palette.

Doing so will yada yada yada* … Mr Google!
*I feel like by now, you’ve memorized this line of mine so no need to repeat it…this time around! ;)
Let’s stay social too! Find me here and here every single day, where I open my kitchen to you and show you what I’m making that day – accompanied by much shenanigans/fun from the family!
Until next week, enjoy this deliciousness I’ve decided to call salad xx

Instructions
To make Roasted Chickpeas

- 2Place chickpeas in a small to medium bowl, and add remaining ingredients. Mix well using a spoon, and taste to make sure the salt is to your liking.
- 3Spread chickpeas on the lined baking sheet and roast in the preheated oven for 35-40 minutes, until crunchy, light, and crispy. Make sure you let them cool a bit as they will continue to crisp up.
To assemble salad
- 1In a large serving bowl, add kale, sweet potato, red onion, lemon juice, olive oil, and salt. Toss well. Just before serving, add the roasted chickpeas and enjoy immediately.
Notes
Regarding which kale to use, it really doesn't matter! I found black kale to be much finer and softer in texture, hence why I say 2 bunches. If you're using regular kale, 1 bunch will be fine. You're looking to get 6 cups of chopped kale (green, red, or black - with stems removed!) You can roast your sweet potatoes a couple of ways: please see Recipe 1 , Recipe 2 . Calories: 282 kcal
