If you need any excuse to eat more vegetables, then I have the perfect recipe for you! You’re going to love love love these healthy 3-ingredient Zucchini Fritters. All you need are a couple staple ingredients and zucchini and you’re set!
So, let’s jump right in, shall we?
Zucchini Fritters
I grew up eating zucchini fritters; my mother used to make them for us quite frequently; only she made them with eggs and they were fried. Not hating though because we ate a ton of them because they were absolutely delish. And who doesn’t love fried anything? Keepin’ it real.
But my little family eats a lot differently because of our allergies, among other things.
So that’s why you’re going to absolutely enjoy this recipe. It’s super easy to make, the kids can help, and all you need to make them are zucchini, flour, and onion (and sea salt of course). And some coconut oil to pan fry. That’s it!

Some of you may be thinking “But Laila, I just counted 5 ingredients. What gives?” I’ll tell you :) Coconut oil doesn’t go into the fritters, so that’s why it doesn’t count as an ingredient. And salt, much like water and pepper, don’t technically count as ingredients either.
So, we’re good? Good.
How to make these zucchini fritters
You’re going to shred your zucchini and place in a bowl with some salt to help get the liquid out. You want to get rid of as much liquid as you can to make the fritters much easier to handle (and so they won’t fall apart). Then once you drain the liquid out, you’re going to add the onion, flour, and the rest of the salt. Mix well until the ingredients are fully combined.
And now you’re ready to cook them!! How easy right? I used coconut oil but you can use any light oil that’s good with heat – like grape seed, avocado, etc. Cook a few at a time and for about 2 minutes on each side. And that is literally it, my friends!

How to serve them
You can eat them as is, or serve with whatever condiment you like. OR, you could make this easy yogurt dip (highly recommend), and all you’d need to make it is yogurt, garlic, and salt. BOOM!
Can’t wait for you to make this one! And please come back and let us know how you liked them. A rating would also be super kind and helpful to everyone who’s thinking about making these unbelievably delicious fritters.
Make sure you’re following the fun over on instagram. I’ll be making and posting a video on how to make this recipe soon for those of you visual peeps like myself who love watching how things are made!
Hope you love these healthy 3-ingredient zucchini fritters as much as my family does. xx

Yogurt Dip
Instructions
To make the zucchini fritters
- 1In a large bowl, add grated zucchini and 1 teaspoon of salt. Mix well and set aside for 10-15 minutes. Then, squeeze the zucchini to release the liquid out. Discard the liquid and return the zucchini to the bowl (or use another bowl to make life easier).
- 2Add chopped onion and the flour to the zucchini and stir well until ingredients are fully combined.
- 3Using a 1.5" scoop (or similar size), scoop zucchini mixture and place on a parchment lined cookie sheet (see picture in post for reference). Alternatively, you can also just scoop and drop into hot pan (whatever you prefer).
- 4Add oil to a large pan and heat on medium high. Once oil is ready, add a few of the scooped zucchini and gently flatten each one so it's flat and not ball shaped. Cook for 1-2 minutes, or until a nice golden brown in color, then flip and cook a further 1-2 minutes.
- 5Remove fritters and place on a paper towel lined plate to help absorb excess oil. Repeat steps 3-4 with remaining zucchini. Serve immediately.
To make the yogurt dip
- 1Combine all ingredients together and stir well. Adjust salt taste to your liking.
Notes
For best results when pan frying, make sure there's always some oil in the pan to fry. That way the zucchini fritters cook nicely. These fritters are best enjoyed right away. But any leftovers can be stored in a lidded container in the fridge. Will keep for a few days. I honestly don't think you'll have much left over though ;) The calorie count includes the oil used for pan frying. Calories: 32 kcal
