These delicious Cauliflower Buffalo Bites are super easy to make, made from scratch, and with little effort. They’re also free from:

  • dairy

  • egg

  • peanut

  • tree nuts

  • soy

It’s a perfectly sauced, tender, comfort food concoction that’s super healthy and incredibly tasty. I served ramen with it because I love this noodle and it complements the cauliflower bites so perfectly.

Ingredients

Instructions

  1. 1Preheat oven to 400F and line a large baking sheet with parchment. Spread the cauliflower florets on the pan and set aside.
  2. 2In a small saucepan, add the following: tomato paste, olive oil, apple cider vinegar, honey, smoked paprika, garlic powder, onion powder, cumin, and salt. And mix and stir cornstarch with the water before you add it to the pan.
  3. 3Place saucepan on medium heat and stir constantly until sauce thickens a bit. About 3 minutes.
  4. 4Remove from heat and place in a high speed blender. Blitz on high to emulsify the sauce.
  5. 5Spread the delicious sauce all over the florets and coat evenly. Don't leave a cauliflower behind!
  6. 6Place pan in the preheated oven and bake cauliflower for 35 minutes, or until sauce has dried up and cauliflower is a beautiful orang-y red color.
  7. 7Remove from oven and serve hot or warm with some ramen!
  8. 8Garnish with sesame seeds and green onion. And if you like the heat, add some hot sauce just before serving.

To make Ramen

  1. 1Place 3 cakes of ramen into salted boiling water. After 1 minute, gently loosen the noodles using a fork or chopsticks. Continue cooking the noodles for an additional 3-4 minutes, or according to package instructions.
  2. 2Immediately remove and place noodles in cold water to prevent further cooking. Serve with Cauliflower Buffalo Bites and ENJOY!!

Notes

This recipe is best served warm. Although we didn't mind eating it cold either :) but for best taste results, enjoy immediately or heat it up on the stove (or microwave if you own one) before serving. If you can handle the heat, definitely add some to the cauliflower before serving. My kids can't tolerate spicy foods so that's why I include it as an optional step at the end of the recipe. Feel free to add hot sauce or another spicy condiment - I love some kimchi with mine. I also tried this dish with some coconut "soy free" sauce and really loved it. So feel free to do that as well.
